Apple Cinnamon Quick Bread

 This is a pretty, girlie quick bread recipe for when you want something with a hand-crafted look  super fast!

 Apple Cinnamon Quick Bread Ingredients:

2 Cups of flour (white or half white & half wholemeal)
2 Teaspoons baking powder
50gms butter or margarine
3 Tablespoons brown sugar
Soda water (about 1/2 a cup)
1 tsp cinnamon (or mixed spice)
1 apple, cored & finely sliced (leave skin on)

  • Put the flour, baking powder and sugar into a large bowl and rub in the butter until the mixture looks like fine crumbs
  • Slowly add a little soda water and mix in. Keep adding small ammounts of soda water until the mixture binds together in a large ball but doesn't look sticky (if you add too much liquid add a little more flour)
  • Tip the mix onto a floured bench and knead lightly into a ball of dough that you can roll out into a large rectangle
  • Lay the slices of apple onto the dough leaving a gap at each end (see picture), sprinkle over the cinnamon

An easy way to start rolling the dough is to fold the first part then keep folding the dough over to make a roll
Wet the edge with water to make the log stick together
  • Roll up the dough into a log and, if you wish, roll around into a circle shape
The join doesn't have to be pretty - the icing will hide it
  • Bake in a 180 degree oven for 20-30 minutes or until the bread feels hollow when you tap it
  • Cool on a wire rack and reisist the urge to cut into it! (the bread will go dry and ickky if you cut it too soon)
  • When cool ice and sprinkle more cinnamon over the top
  • Serve on your best china with a pot of tea and play ladies for the day

Simple Icing Recipe:

6 Tablespoons icing sugar
Milk or water

Add the liquid a teaspoonful at a time until you have a smooth paste which you can spread or drizzle onto the bread
