How to Make a Pizza Base

The best pizzas use a couple quality toppings to allow the base to cook well and prevent a messy mass of ingredients from collapsing onto your plate while you eat!

  • Take one basic dough recipe (if you like, swap a third of the water for oil when you make the dough for a richer base - or use  the original recipe for a waist-friendly option) and roll out onto a floured bench to fit the shape of your tin
  • Spray the base with water and put into a 50 degree (celcius) oven to proof for 30 minutes while you make the basic sauce recipe 

A handful of dough like this will make one large pizza
Basic Pizza Sauce
Make a basic pizza sauce by lightly browning half a finely diced onion and a clove of crushed garlic, add a tin of chopped tomatoes and 2 tablespoons of dried oregano (or 4 tablespoons fresh oregano)
Reduce over a low heat until the sauce is rich and thick, season with salt and pepper to taste and add some chili if you want more pow or a couple teaspoons of tomato paste for extra flavour

Spread sauce over the pizza base and cook in a hot oven for ten minutes, remove and top with toppings of your choice and bake a further 10 mins or until the cheese has melted and the base is crisp

Pizza Topping Ideas:
  • Blanched, chopped spinach (frozen is handy) and crumbled feta cheese
  • Halved cherry tomatoes and thinly sliced red onion
  • Shredded smoked chicken, apricot sauce and Camembert slices
  • Diced, cooked pumpkin, pine nuts and crumbled feta cheese
  • Christmas Leftovers! Shredded, cooked turkey, cranberry sauce and Camembert or Brie slices
  • Diced ham, leftover glaze, pineapple chunks and leftover bread or cheese sauce, grated cheddar

Dessert Pizza Ideas:
  • Skip the tomato sauce on the base and try finely sliced apple or banana topped with caramel sauce and cinnamon for a dessert pizza
  • Lemon or passionfruit curd and cream cheese slices
