Quick Fruit Crumble

Here's a speedy way to throw together a couple individual fruit crumbles for a fruity dessert - nom!

Quick Fruit Crumble Recipe

 To make these fruit crumbles you will need:

A tin of fruit in syrup (or some stewed fresh fruit); apricots, peaches or apples make great fruit crumble
1 tsp of vanilla
2 tsp cornflour
Crumble topping

Drain the fruit juice/syrup into a microwave-proof jug and divide the fruit between two oven-proof dishes


Mix the cornflour and vanilla together and add to the fruit juice/syrup.

Microwave one minute at a time, stirring well, until thickened. Pour over the fruit.



Top with crumble mix and bake in a 180 degree oven until the top is crisp and brown



Serve with cream, ice cream or yogurt.

Crumble Mix

I make this in one big batch and store it in a zip lock bag in the freezer

  • 1 cup white of wholemeal flour
  • 1/4 cup of brown sugar
  • 100g butter
  • 2T honey

Place all the ingredients into a food processor and zap until they look like fine breadcrumbs, add 1/2 cup of rolled oats and sprinkle over crumble or freeze in an airtight container.

Yes, it's crumble mix not anything dodgy!
