Recipe: Semi Dried Tomatoes

The humble tomato - sweet, delicious and too tasty to be so healthy!


It's just about that time of year when we are drowning in tomatoes - not that I'm complaining. If I could only eat one fruit for the rest of my life then tomatoes would be it. I know, half of you think they are a vegetable but whether they're a fruit or a vege; a tomAYto or a TomARto; these little red babies are delish and this recipe is part of my favourite breakfast.

Half a dozen ripe tomatoes
Olive or Rice Bran Oil
Balsamic Vinegar
Salt and pepper

Cut the tomatoes in half (around the "waist" between the top and bottom) and place onto an oven tray

Drizzle with oil and balsamic vinegar and scatter over a little (arteries!) salt and lots of cracked pepper



Place into a cool oven - about 90 degrees Celsius or your lowest setting - and bake for 4-6 hours until they are halved in size but not burnt (turn the oven down!).



Enjoy their flavour compacted juicy goodness with a couple poached eggs and some streaky bacon or on top of your favourite steak for dinner.
