Christmas Recipes with Strawberries

Here are my two favourite strawberry recipes at Christmas time.

Serve marinated strawberries over homemade vanilla ice cream

Marinated Strawberries

  • 4 tablespoons castor sugar
  • 2 tablespoons balsamic vinegar, sherry or brandy 
  • 2 tablespoons of water

Put the ingredients into a small saucepan and bring to the boil
Simmer until the sugar has dissolved and leave to cool
Remove the tops from the strawberries and slice into quarters
Pour over the syrup and leave to marinate for 8-12 hours

Homemade Ice Cream

  • 2 eggs
  • 1 cup of cream
  • 1/2 cup of castor sugar
  • Flavouring
Whisk eggs white to a soft fold in a clean bowl
Add 1/4 of the sugar and whisk until they form stiff peaks

In another bowl add 1 tablespoon of water to the egg yolks and whisk until frothy
Add the remaining sugar to the yolks and whisk until creamy

In a third bowl whisk the cream until it forms soft folds and add the flavouring

Fold the three bowls of ingredients together and freeze in a 2 litre ice cream container

Some flavourings I've used include:

Vanilla: 2 tsp of vanilla essense or scrape out the insides of a vanilla pod
Hokey Pokey: 1 tsp vanilla essence and 200g of crushed hokey pokey
After Dinner Mint: 1 tsp of peppermint essense and 1 packet (200g) of chopped after dinner mints


Red and Green Christmas Salad

  • 1 large, ripe avocado sliced
  • 1 small punnet of strawberries, sliced
  • Half a red onion cut into thin slices
  • Smoked chicken breast, shredded
  • Bunch of baby spinach, washed and dried (or buy it pre-washed)

For the dresssing:

  • Juice of a small lime
  • 2 tablespoons of sour cream
  • 2 tablespoons of light oil of your choice
  • Salt and pepper to taste
Whisk the dressing ingredients together and add a little water to thin if necessary
Gently mix together the salad ingredients with the salad dressing and serve over a bed of baby spinach leaves
