Caramelized Pear and Blue Cheese Parfaits



This recipe was created to go with Seifried's Sweet Agnes Riesling Dessert wine, I buy it from the cellar door near Seifried's Rabbit Island Vineyard. If you can still get hold of the 2011 vintage it's slightly sweeter.



Caramelized Pear and Blue Cheese Parfaits

Serves 2 Greedy Girls

2 Beurre Bosc Pears
25g (1 stick) butter
2 tablespoons brown sugar
Pinch salt (if using unsalted butter)
1 tablespoon of cream
Wedge of double cream blue cheese
1 tsp grated nutmeg

Peel and slice the pears into thin pieces, removing the core

Heat the butter in a frying pan on a low heat and add the pear slices and sugar

Cook until the the pears are light brown and soft and the butter has caramelized into a sauce

Remove from the heat and stir in the cream and salt to taste.

Crumble the blue cheese into bite-sized pieces and stir through the warm pears

Spoon into parfait glasses and sprinkle over nutmeg
Serve with a dessert wine like Seifried's Sweet Agnes Reisling
